After a rough day yesterday, I decided to make breakfast for dinner. This recipe makes six individual waffles in a standard waffle maker – I scaled it down to half. I also picked up some turkey sausage patties to eat on the side. Life looked a lot brighter after dinner!
Whole Grain Waffles
From Allrecipes. Makes six waffles.
Ingredients:
2 eggs, beaten
1 3/4 cups skim milk
1/4 cup canola oil
1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
1 cup whole wheat pastry flour (I used all-purpose whole wheat)
1/2 cup flax seed meal
1/4 cup wheat germ (I didn’t have any, so I just added extra flour)
1/4 cup all-purpose flour
4 teaspoons baking powder
1 Tablespoon sugar
1/4 teaspoon salt
Directions:
1. Preheat a waffle iron and coat with cooking spray.
2. In a large bowl, whisk together the eggs, milk, oil, applesauce, and vanilla.
3. Beat in whole wheat pastry flour, flax seed meal, wheat germ, all-purpose flour, baking powder, sugar, and salt until batter is smooth.
4. Pour batter into waffle iron in batches, and cook until crisp and golden brown.
Those look great! I’ll have to try them as pancakes (I don’t own a waffle maker).
