
After a rough day yesterday, I decided to make breakfast for dinner. This recipe makes six individual waffles in a standard waffle maker – I scaled it down to half. I also picked up some turkey sausage patties to eat on the side. Life looked a lot brighter after dinner!
Whole Grain Waffles
From Allrecipes. Makes six waffles.
Ingredients:
2 eggs, beaten
1 3/4 cups skim milk
1/4 cup canola oil
1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
1 cup whole wheat pastry flour (I used all-purpose whole wheat)
1/2 cup flax seed meal
1/4 cup wheat germ (I didn’t have any, so I just added extra flour)
1/4 cup all-purpose flour
4 teaspoons baking powder
1 Tablespoon sugar
1/4 teaspoon salt
Directions:
1. Preheat a waffle iron and coat with cooking spray.
2. In a large bowl, whisk together the eggs, milk, oil, applesauce, and vanilla.
3. Beat in whole wheat pastry flour, flax seed meal, wheat germ, all-purpose flour, baking powder, sugar, and salt until batter is smooth.
4. Pour batter into waffle iron in batches, and cook until crisp and golden brown.

Last Saturday I helped host a golf-themed bachelorette party for my good friend Myla. Her bridesmaids came up with the idea and it turned out to be SO much fun. We drove all over town completing various tasks, or “holes” – including drinks (of course), sushi, cupcakes, actual putting on one of those putting mats that spits the ball back at you, karaoke, and more. My only job was to bring food for the portion of the party at Myla’s apartment. I made mini-quiches, a veggie and dip tray, and chocolate caramel crack(ers). It was a great night!

On Sunday, Caroline accompanied me on my tax-free shopping spree. Knowing me as she does, she had sent me an early birthday card with a New York & Company giftcard and coupons, so that was the first place we visited. :) I found an adorable dress (with pockets!), two pairs of pants, and the bracelet and earrings on the right. That was the bulk of my purchases. We did drive out to DSW and J.Crew, but I wasn’t thrilled with anything at DSW (gasp!), and J.Crew closed right as we pulled up. I thought most places closed no earlier than 6:00 on Sundays, but Saddle Creek jumped the gun, even on tax-free weekend. So no ruffle tank and cute skirt for me. We made a final stop at Target to console ourselves, and I bought these jeweled flip-flops that I’ve been watching for months.
I also went to a progressive dinner for my new small group at my new church. So it was a very busy weekend, and even now on Wednesday I don’t feel totally recovered. But quality time with friends is more important than sleep anyway. :)

It’s Tax Free Weekend in Tennessee! Due to prior commitments, I won’t be able to hit the stores until Sunday. I generally try to avoid shopping on Sundays, and I don’t really need anything fashion-wise. But as high as our sales tax is, I can never pass this up. Plus there are some great end-of-summer sales right now.
I’m hoping to hit my shoe paradise, DSW ($5 off birthday coupon!!), and J. Crew to see if they have this clearance ensemble:
I love little casual skirts and would like more to wear in lieu of shorts on the weekends. (I’d like to try this sewing pattern, without the pockets, but shirring is too advanced for me. Right now I can’t do much more than sew a straight line after my mom loads the machine for me.)
Then I’ll go to the mall to check out Express, JCPenney, and the new accessories place, Charming Charlie’s. I’m looking forward to it! :) Anyone else have tax-free weekend plans?

This was a fantastic light meal for a 103-degree day. I had some corn on the cob and decided this recipe was the perfect use for it! I brushed the cobs with some olive oil, wrapped them in foil, and grilled them for about 10 minutes. Delicious! I tried to roast the walnuts on the grill too, to avoid turning on the oven, but ended up with a burned mess. Eh, they’re just as good not roasted.
Corn Salad with Feta and Walnuts
From Real Simple, June 2009
Ingredients:
1 cup walnuts
4 cups fresh corn kernels, raw or cooked
2 jalapeños, seeded and thinly sliced
2 Tbsp fresh lime juice
2 Tbsp extra-virgin olive oil
kosher salt and black pepper
1/2 cup crumbled Feta cheese (2 ounces)
Directions:
1. Heat oven to 400° F. Spread the walnuts on a rimmed baking sheet and toast until fragrant, 6 to 8 minutes. Let cool and roughly chop.
2. In a large bowl, combine the corn, jalapeños, lime juice, oil, walnuts, 1/2 teaspoon salt, and 1/4 teaspoon pepper. (I also added a small bell pepper from my garden.) Sprinkle with the Feta before serving.
